Buckwheat Bar with Cranberries, Chia Seeds and Linseed

Today, it is evident that people are increasingly interested in healthy food and its benefits to the body. Every day as we go to the store we see a shelf full of healthy food that is rich in protein, fiber and minerals and has low allergens and no gluten. Therefore, we decided to accept the challenge from “Ekofrisa” to create a new product that could be produced from their buckwheat crackers that might have some defects. This helped to come up with the idea of creating a snack that is popular these days – a bar, and in order to make it attractive and popular – we made it extremely healthy. We used buckwheat crackers that does not contain gluten; cranberries, rich in vitamins and antioxidants; chia seeds, rich in fiber, omega 3 fatty acids, vitamins and minerals; we also decided to add linseeds for their vitamins, fiber, vegetable proteins and micronutrients.

The buckwheat cracker with cranberries, chia seeds and linseed consists of relatively inexpensive products: buckwheat crackers with possible defects (84.5%), sugar syrup (8.45%), chia seeds and linseeds (1.45%), cranberries (2.8%) and lemon juice (2.8%).

The production technology is very simple:

  1. Sugar syrup is heated until the syrup reaches a temperature of 117 ℃.
  2. Pour lemon juice into the prepared syrup, then crush the defected buckwheat crackers, chia seeds along with linseed and chopped cranberries. The mixture is stirred.
  3. The bars are formed.
  4. The prepared bars are placed for 5-10 minutes flush into the refrigerator (at a temperature of 6 ℃).
